For many centuries, liquor was contained in pottery jars. Pottery is made of water and clay by fire. The pottery jar was considered as the best container after thousand-year experience. But it has three defects: too large for restoring, fragile, and inconvenient to be fortified. We then initiated the Liquor Sea Project to improve the traditional liquor restoration method, and this improvement is indeed a breakthrough and innovation. It was awarded the third prize of Science and Technology Achievements of Chinese National Light Industry Ministry, and also won one of the Twenty Major Scientific and Technological Achievements in food science in 1983. The Liquor Sea Project changed the history of solely relying on pottery in restoring liquor that revolutionizes the liquor industry. In 2009, it was awarded the Guinness World Records distinction.


After The Third National Liquor Evaluation in 1979, the president of the CCP Hu YaoBang went to visit one of these wineries. When he came to the storage room, he found the leakage under the pottery jar and asked: “How much liquor is wasted like this every year?” The director said: “About 10 tons every year”. President Hu felt it was such a shame that he raised concerns for new storage system. In a very short time, Shuang’gou liquor undertook this task and assembled a new team for the study. After many experiments, an underground liquor cellar was built and put in operation in 1980. The Liquor Sea is made of 51 huge pools, each 5.5m in depth and containing 75 tons of liquor. To ensure the quality and taste,The inner wall of the pool is overlaid with ceramic panels. The Shuang’gou Liquor Sea, well under the ground, features several advantages such as a small occupied area, walls hard to break, and fortifying convenience. This is the place where the first class flavoring liquid has been reserved usually for a period of 5 years.
