螃蟹的食用史,最早见于《诗经》。明代李时珍将食蟹之法归为五种:“以蟹生烹盐藏槽收酒浸酱汁皆为佳品”。其中生烹就是我们最常用的蒸和煮了。煮蟹之法甚为简便:先将锅中注入冷水,加生姜,然后将洗刷一净的螃蟹不加束缚地置于其间,随着水温由低至沸,大闸蟹就青衣换红妆了,不多时便满屋飘香,让人垂涎欲滴。
洪泽湖大闸蟹,自古闻名遐迩,其蟹个体硕大、壳青肚白,雄者脂白如玉,雌者脂黄如金,一到金秋,肢体肥大,肉质细嫩,成为美食家们不可多得的鲜美佳肴。俗说:“蟹肉上宴百味淡”,意思是宴席上只要上了螃蟹,其它菜肴就显得没有味道了,这说明螃蟹在美食中所占的地位。《红楼梦》中有持螯赏桂的诗句,诗曰:“持螯更喜桂阴凉,泼醋擂姜兴欲旺。脐间积冷馋忘忌,指上沾腥洗尚香”。这两句诗道出了蟹的鲜美和食蟹人的浓厚兴致。
洪泽湖大闸蟹壳似鸭蛋壳,蟹肚似洁玉白,营养极为丰富。据科学分析,每百克洪泽湖大青蟹蟹肉中,含蛋白质14克、脂肪5.9克、碳水化合物7克,与每百克瘦猪肉相比,螃蟹的碳水化合物、钙、铁的拥有量分别为猪瘦肉的6倍多、1.1倍多和32倍多。螃蟹壳还可以入药,有散淤、续筋、接骨、抗结核的功能。
